Every year there is one winning recipe I can count on for quickly producing 3 dozen wonderful bars. It's perfect for a cookie exchange or to freeze for whenever a little treat is needed. My gift to you for a simpler holiday ahead
Old World Raspberry Bars
2 ¼ C Flour 1C Sugar
1 C chopped nuts 1C Butter (soft or melted)
1 Egg 10 oz jar of raspberry preserves
Preheat over to 350 degrees. Mix all ingredients except preserves in large bowl. Line 9x9 pan with parchment paper and press all but 1 ½ C of this mixture into bottom of pan. Spread preserves over top, keeping ½ inch from pan edges. Crumble remaining mixture over top of preserves. Bake 40-50 minutes until browned. Cut into 36 small squares. These freeze well too! Substitute Apricot or other fruit preserves as you like.
