All summer long I've been challenging myself to move more, take up weight training and add more lean protein, colorful foods and fiber to my diet. I'd been successful at losing weight and now wanted to focus on maintaining the good changes I'd been incorporating from Good Energy by Casey Means MD.
It was valuable for me to lead a group of 8 women through the principles of Good Energy throughout the summer of 2024, which included providing new recipes and food samples each week. The book gave me a greater appreciation for colors, flavor and health. Good food can also be good for you and it sure was fun proving it to the sceptics.
My recipe for Low Carb Higher Protein Pizza has become one of my favorites and I loved making it for my patio group for our final potluck gathering
1 Lb ground organic chicken or turkey breast
2 organic Eggs
1/4 C Chickpea Flour
2T ground flax seeds
½ C cheese (I used mixture of parmesan, asiago and mozzarella)
¼ tsp Garlic salt
¼ tsp oregano
Pepper to taste
Preheat oven to 425 degrees. Mix all ingredients using a fork in a large bowl. Spread mixture in a thin layer on a baking stone or parchment on baking sheet. Bake 35-40 minute until brown and crispy. Remove from oven and top with fresh pesto (see previous blog post recipe) vegetables and additional cheese of your choice. My sample included sundried tomatoes, artichoke hearts, kalamata olives, banana peppers, red & orange peppers, fresh garlic, red onion and fresh basil. I topped mine with 2 ounces fresh mozzarella and about 1 ounce of parmesan cheese. Bake another 10-15 at 425 minutes to soften toppings and melt cheese to perfection.
